Homemade Barbecue sauce
Homemade is always best. Often times, we find ourselves spending unnecessary amounts of money on processed marinates and barbecue sauces. I for one have nothing against store bought marinates but would rather make my own, in my preferred quantity. Not only is it more convenient but also cost effective. The best thing about making barbecue sauce at home, is being able to alter everything, and being able to remove anything that does not agree with your specific taste buds. This particular barbecue sauce is great for poultry, mutton and lamb.
Below are the ingredients used for this sweet sour aromatic barbecue sauce. Serves 15 people.
Ingredients:
2 tablespoons of Cumin powder
2 tablespoon of Coriander powder
4 tablespoons of Garlic flakes
3 tablespoons of Mild Curry powder
1 tablespoon of Italian herbs
1 tablespoon of Thyme
1 teaspoon of Black pepper
2 1/2 tablespoons of Vinegar
2 1/2 cups of Tomato sauce
1/2 a cup of Chutney
1/3 a cup of cooking oil
Seasoning of your choice (measure according to individual preference)
Method:
Mix all the dry ingredients together in a bowl.
To a medium sized pot add cooking oil and allow oil to heat up.
Add all the mixed wet ingredients and allow to cook until sauce has slightly thickened.
Now add the mixture of dry ingredients to the pot and mix well by stirring.
Allow to cook for an additional 2 minutes.
Once all the ingredients are well mixed and the sauce thick in consistency, remove the pot from heat and allow the sauce to cool.
To a bowl of chicken pieces, pour the sauce and coat the pieces well.
Cover with cling wrap and allow the chicken to marinate in the fridge for 6-8 hours or overnight.
Once the firewood and charcoal are burning hot for a lovely barbecue session, prepare the grill and braai the chicken pieces.
