Delicious Rice Pudding Recipe
A mouth watering dessert that is both satisfying and flavorful. Nothing quite appetising like a creamy rice pudding. It is very easy to make and of course the main ingredients are often, if not always, easily found in every kitchen of every home. For this delightful dessert you will need:
- 1 1/2 cups fresh milk
- 1/2 a cup of fresh cream
- 4 cups of cooked basmati rice (or any other leftover whole grain rice)
- 1 tin condensed milk
- 1 teaspoon crushed vanilla bean or 1 teaspoon vanilla essence
- 1/2 teaspoon ground nutmeg
- 1/2 a teaspoon ground cinnamon
- 1 1/2 cup water
- Salt to taste
Method:
- In a large pot add all the ingredients and cook at medium heat
- Cook until thickened, while stirring at intervals of 8-10 minutes
- Once thickened remove the pot from the heat
- Place the pudding in a serving dish/glass
- Cover with cling plastic wrap (placing the plastic wrap on the surface of the custard)
- Refrigerate for 30 minutes or until cool
- Serve with vanilla ice cream, cream, and fruit (peaches/strawberries)
- Garnish with maple syrup, toffee sauce, ground cinnamon, fruit and or with crushed almonds… Enjoy!!!
